Festive cocktail recipes
It's time to get creative in the kitchen again. We asked our Executive Head Chef, Thomas Rhodes for a couple of his favourite cocktail recipes to share, just in time for Christmas.
Baileys and Chocolate Martini
Serves 2
30g Hot chocolate powder
10g Boiling water
70g Baileys
40g Espresso
35g Vodka
1 Miniature Christmas bar of your choice
1. Fill cocktail shaker with ice
2. Add boiling water to chocolate powder and make a paste
3. Add Baileys, Espresso, and vodka to ice filled shaker
4. Add chocolate paste
5. Shake for 30 seconds
6. Strain into cocktail glass
7. Chop chocolate bar and garnish the martini with it
8. Enjoy
Mulled Wine
1 Bottle of quality wine
150g Port
125g Muscovado sugar
3g Star anise
1g Cloves
3 Bay leaves
2 Cinnamon sticks
7g Fresh Ginger
1 Medium orange
1. Segment orange (keeping the skin on)
2. Snap Cinnamon sticks in half
3. Cut ginger into approx. 1cm chunks (skin on)
4. Add port and wine to a pan, place on medium heat
5. Add the sugar, anise, cloves, bay, cinnamon, and ginger
6. Heat to approx. 55oC (do not boil)
7. Add orange segments to heat proof glasses
8. Poor wine into glasses
9. Enjoy
