Delicious mince pies
Christmas is just around the corner! Get into the festive spirit slighty early, with this delicious mince pie recipe shared with you from our Executive Head Chef, Thomas Rhodes.
Mince Meat
110g sultanas
170g currants
170g raisins
170g grated Braebrun apples
110g veg suet
200g soft brown sugar
100g finely chopped mixed peel
2.5g mixed spice
1 zest and juice orange
1. Mix together all the ingredients
2. Place in sterilised jar
3. Seal jar
4. Leave for 5 days
Then use
Shortcrust pastry
170g plain flour
100g cold butter
15g caster sugar
1 egg yolk
1. Mix together the butter and flour until crumble like
texture
2. Add caster sugar
3. Add yolk
4. Mix together and if needed add ice cold water (about 15g)
5. Form dough into a ball
6. Rest in clingfilm in the fridge for an hour
7. Roll the dough to 5mm thick
8. Cut rings out (slighltly larger than your muffin tray)
9. Line the muffin tray with spray oil
10. Line with the pastry
11. Fill with mince meat
12. Top with pastry (can choose a pattern if you would like)
13. Bake at 170 degrees for 12
minutes
14. Rest on a wire rack until room temp
